1cupcanned chickpeas, drained (reserving 1/4 cup liquid)
1headroasted garlic, (cloves removed from the husk and husk discarded)
½cuptahini
1 lemon, juiced
2tbspextra virgin olive oil
Salt and pepper to taste
Optional garnishes:
Fresh parsley
Olive oil for drizzling
Pomegranate seeds
Hemp hearts
,Pepitas
Instructions
Preheat oven to 375°F.
Season the pumpkin halves with salt and pepper and place them onto a lightly greased baking sheet, cut-side down.
Roast the pumpkin in the oven for 40 to 45 minutes or until fork-tender.
Remove from oven and allow the pumpkin to cool for about 30 minutes to an hour.
Scoop the roasted pumpkin flesh into a blender and add the remaining ingredients.
Puree the mixture until smooth.
Season with salt and pepper.
Spread the mixture onto a shallow dish and top with desired garnishes.
Serve with crudité or pita chips.
Notes
