Like me, you probably don’t think you need a recipe for scrambled. Since I was a teen, I have been cooking basic scrambled eggs in a hurry like most people and didn’t think I was doing anything wrong.

About 20 years ago (I just aged myself) I went out for a nice breakfast with my husband, and I tasted the absolutely best scrambled eggs EVER! These eggs were SO amazing. I had to ask the chef how he accomplished such amazing eggs. After a 10-minute conversation, I knew exactly what I was doing wrong and how to fix it. My family has been enjoying these delicious, scrambled eggs ever since.

2 tablespoons milk, can substitute for plant milk, or water
1/4 teaspoon Kosher salt can substitute for extra-virgin olive oil
1 tablespoon unsalted butter
fresh black pepper, for serving
fresh chopped herbs for garnish optional

Instructions

  • In a medium mixing bowl, whisk the eggs, milk, and salt together until smooth and combined, with no streaks of egg white remaining to form a foamy, and uniform color.
  • Melt the butter in an 8-inch nonstick pan over medium heat, for about a minute. 
  • Pour the eggs into the middle of the pan, and let them cook for a few seconds, undisturbed, and then reduce the heat to medium-low.
  • Using a rubber spatula, continuously swipe eggs from one end to the other across the bottom of the pan in various directions to form medium, soft curds of scrambled eggs.
  • Continue cooking over medium-low heat, folding, and stirring the eggs every few seconds.
  • Remove the pan from the heat when the eggs are mostly cooked, but a little liquid egg remains. 
  • Fold the eggs over on themselves bringing them together.
  • Transfer eggs to a warm serving dish. 
  • Finish to taste with some freshly cracked pepper
  • Garnish with chopped fresh herbs, if desired.
