Cut the potatoes into bite-sized pieces, about 1/2” to 3/4” thick, and place them in a medium mixing bowl.
Drizzle the olive oil over the potatoes and sprinkle on the salt, onion powder, garlic powder, and black pepper.
Toss the potatoes until they are evenly coated in oil and seasonings.
Transfer the seasoned potatoes to the air fryer basket in a single layer.
Air fry at 400˚F for 18-20 minutes, flipping and tossing halfway through the cooking time.
Cook until the potatoes are golden brown and crisp on the outside, and tender when pierced with a fork.
Garnish with parsley (optional) and serve hot.
