Ingredients

  • cups all-purpose flour
  • ¾ cups granulated sugar, plus 1 tablespoon for muffin tops
  • 2 tsp baking powder
  • ¼ tsp fine sea salt
  • cups neutral-flavored oil (safflower, avocado, or vegetable oil)
  • 1 large egg
  • cups milk or non-dairy milk (use more as needed)
  • tsp vanilla extract
  • 8 oz fresh or frozen blueberries

Instructions

Prepare Oven and Muffin Cups:

  • Preheat the oven to 400°F (204°C).
  • Line muffin cups with paper liners (10 for standard, or 22 for mini).
  • Lightly grease or spray the tops of the muffin tin with oil to prevent sticking. Or use Baking Cups.

Make Batter:

  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • In a measuring jug, combine oil, egg, milk, and vanilla extract.
  • Pour wet ingredients into the bowl with dry ingredients and stir gently until combined.
  • Fold in blueberries.

Bake Muffins:

  • Divide batter between muffin cups, filling to the tops for big muffins.
  • Sprinkle a little sugar on top of each muffin.
  • Bake for 15 to 20 minutes until tops are golden and a toothpick inserted comes out clean.
  • Transfer to a cooling rack.
