For the Fluffy Scrambled Egg Base
- 8 large eggs
- 2 tbsp milk or heavy cream
- 2 tbsp unsalted butter
- ½ tsp fine sea salt
- ¼ tsp freshly cracked black pepper
For the Tacos
- 1 cup sharp cheddar cheese or Mexican blend cheese, shredded
- 1 large ripe avocado, diced (or fresh guacamole)
- ¾ cup fresh pico de gallo or favorite tomato salsa
- ½ cup black beans, rinsed and warmed (optional)
- ¼ cup sour cream or Mexican crema
- ¼ cup fresh cilantro, finely chopped
- 1 lime, cut into wedges (for squeezing)
Warm the Tortillas
Heat a dry skillet over medium-high heat. Warm each tortilla for about 20–30 seconds per side until soft, pliable, and lightly toasted.
Transfer warmed tortillas to a clean kitchen towel and fold over to keep them warm and soft.
Scramble the Eggs
In a medium bowl, whisk together the eggs, milk, sea salt, and black pepper until completely combined and frothy.
Melt the butter in a non-stick skillet over medium-low heat.
Pour in the egg mixture and let sit for a few seconds until the edges just begin to set.
Using a heat-safe rubber spatula, gently push and sweep the eggs from the edges toward the center to form soft, large, fluffy curds.
Remove from heat while the eggs are still slightly glossy. They will finish cooking from residual heat.
Assemble and Set Out Toppings
Spoon a generous heap of warm, fluffy scrambled eggs into the center of each warmed tortilla.
Set out bowls containing the shredded cheddar, diced avocado, pico de gallo, black beans, sour cream, cilantro, and lime wedges.
