Ingredients

For the meatballs:

  • 1 lb ground chicken
  • ¼ cup breadcrumbs
  • ¼ cup parmesan cheese, grated
  • ¼ cup milk
  • 1 egg
  • 1 tbsp minced garlic
  • ½ tsp salt
  • ¼ tsp salt

For the glaze:

  • ¼ cup soy sauce
  • ¼ cup honey
  • 1 tbsp rice vinegar
  • 1 tbsp minced garlic
  • 1 tsp grated ginger

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix together the ground chicken, breadcrumbs, Parmesan cheese, milk, egg, minced garlic, salt, and black pepper until well combined.
  • Shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
  • Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and golden brown.
  • While the meatballs are baking, prepare the glaze by combining the soy sauce, honey, rice vinegar, minced garlic, and grated ginger in a small saucepan. Cook over medium heat, stirring occasionally, until the mixture thickens and becomes glossy.
  • Once the meatballs are cooked, remove them from the oven and brush them generously with the glaze.
  • Serve the chicken meatballs warm, garnished with chopped green onions if desired.

Notes

Pro Tip: For an extra burst of flavor, try adding a tablespoon of sriracha sauce or chili paste to the glaze mixture. This will give your chicken meatballs a spicy kick that pairs perfectly with the sweet and tangy glaze.
Variation: Experiment with different ground meats such as turkey or pork to create unique flavor profiles. You can also swap out the Parmesan cheese for grated mozzarella or Asiago for a different cheesy twist. Additionally, try rolling the meatballs in sesame seeds before baking for added texture and flavor. Let your creativity run wild and customize these meatballs to suit your taste preferences!
