Ingredients

  • 1 cup long-grain jasmine rice, rinsed well and drained
  • cups water
  • 3 tsp extra-virgin olive oil, divided
  • 1 small garlic clove, finely minced
  • 2 scallions, finely chopped
  • 1 tsp lime zest
  • tbsp sea salt
  • ½ cup finely chopped fresh cilantro

Instructions

  • In a medium saucepan with a lid, combine the rinsed rice, water, and 1 teaspoon of olive oil. Bring to a boil over medium-high heat.
  • Once boiling, reduce the heat to low, cover the saucepan with a lid, and simmer for 20 minutes, or according to the instructions on the rice package.
  • After 20 minutes, remove the lid and fluff the rice with a fork.
  • Add the minced garlic, chopped scallions, and lime zest to the rice. Stir to combine.
  • Let the rice cool for 1 minute, then add the remaining 2 teaspoons of olive oil, ¼ teaspoon of salt, fresh lime juice, and chopped cilantro. Stir well to incorporate all the ingredients.
  • Taste and adjust seasoning if necessary, adding more salt or lime juice according to your preference.
