Preheat your oven to 425°F.
Toss the sweet potato cubes with olive oil, garlic powder, paprika, salt, and pepper in a medium bowl until they are coated well.
Spread the potatoes on a baking sheet. Roast them for 25 to 30 minutes. You want them tender and a little brown on the edges.
Cook the ground beef in a skillet over medium heat while the potatoes are in the oven. Stir it often until it is fully browned, then season it with a little salt and pepper.
Spoon the warm sweet potatoes into two serving bowls to create your base.
Add the beef, a big scoop of cottage cheese, and the fresh avocado slices right on top.
Drizzle with hot honey if you want a little bit of sweet heat. My family loves this part!
