Ingredients

  • 1 large sweet potato, cubed
  • ½ lb lean ground beef
  • ½ cup cottage cheese
  • ½ avocado, sliced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Optional: Hot honey or chili flakes for topping

Instructions

  • Preheat your oven to 425°F.
  • Toss the sweet potato cubes with olive oil, garlic powder, paprika, salt, and pepper in a medium bowl until they are coated well.
  • Spread the potatoes on a baking sheet. Roast them for 25 to 30 minutes. You want them tender and a little brown on the edges.
  • Cook the ground beef in a skillet over medium heat while the potatoes are in the oven. Stir it often until it is fully browned, then season it with a little salt and pepper.
  • Spoon the warm sweet potatoes into two serving bowls to create your base.
  • Add the beef, a big scoop of cottage cheese, and the fresh avocado slices right on top.
  • Drizzle with hot honey if you want a little bit of sweet heat. My family loves this part!
