Copycat Bob Evans Candied Bacon

Sweet, smoky, and dangerously addictive, this Copycat Bob Evans Candied Bacon bakes up in your oven with a sticky brown sugar glaze and a tiny kick of cayenne.

Ingredients

  • 12 slices Applewood smoked bacon
  • ½ cup packed brown sugar
  • 2 tbsp water
  • ½ tsp cayenne pepper, optional

Instructions

  • Preheat your oven to 375 degrees F.
  • Line a large baking sheet with foil. Place a wire rack on top and lightly spray it with cooking spray. I usually just use my metal cooling racks for this.
  • Lay the bacon across the wire rack, making sure the slices do not overlap.
  • In a small bowl, mix together the brown sugar, water, and cayenne pepper if you are using it.
  • Brush the brown sugar mixture over the bacon, making sure each slice gets a good coating.
  • Bake for 20 to 25 minutes, or until the bacon is browned and caramelized to your liking.
  • Carefully remove the bacon from the rack and place it on a paper towel lined plate to cool.
  • Let it cool for a few minutes before serving. And try not to eat half of it while you are waiting.

Notes

  • Bacon Choice: Applewood smoked bacon gives the closest flavor to the restaurant version, but maple or hickory smoked varieties work wonderfully too.
  • Cooling Time: Let the bacon sit on the paper towels for at least five minutes after baking. The sugar glaze is piping hot straight out of the oven and hardens up as it cools down.
  • Easy Cleanup: Line your baking sheet tightly with heavy duty aluminum foil before adding the wire rack. Baked sugar is sticky, and the foil makes washing dishes a breeze!
