Instructions
Prep and Mix Cupcake Batter: Preheat your oven to 350°F (175°C) and line two 12-cup muffin tins with decorative paper liners. Whisk together the flour, baking powder, and salt in a medium bowl. In a large bowl or stand mixer fitted with a paddle attachment, beat the softened butter and granulated sugar on medium-high speed for 3 to 4 minutes until pale, light, and fluffy. Add eggs one at a time, beating well after each addition, then stir in the vanilla bean paste. With the mixer on low speed, alternate adding the dry flour mixture and whole milk in three batches, beginning and ending with the dry ingredients. Mix until just combined.
Bake and Cool: Divide the batter evenly among the 24 cupcake liners, filling each about two-thirds full. Bake for 16 to 18 minutes, or until a toothpick inserted into the center comes out clean and the tops spring back when gently touched. Let them cool in the pan for 5 minutes, then move them to a wire rack to cool completely before frosting.
Whip the Pastel Buttercream: Beat the 3 sticks of butter in a large bowl on medium-high speed for 3 minutes until smooth and pale. Gradually add the sifted powdered sugar one cup at a time, alternating with splashes of heavy cream and vanilla extract. Once incorporated, beat on high speed for 2 minutes until light and fluffy. Divide the frosting into separate bowls if using multiple colors, and stir in a tiny drop of gel food coloring to reach soft pastel shades.
Pipe, Decorate, and Build the Tower: Fit a large piping bag with a large star tip and fill with pastel buttercream. Pipe thick, elegant swirls starting from the outer edge and working inward to build height. Top each cupcake with an edible pressed flower, sugar pearls, or decorative picks. Arrange them on a multi-tiered display stand, starting with a wide base and tapering up to a single crowned cupcake at the very top.
