Ingredients

  • 3 large eggs
  • ½ cup cottage cheese
  • 1 cup fresh spinach, chopped
  • 1 tbsp chopped green onions
  • Salt and black pepper, to taste
  • 1 tsp olive oil or butter

Instructions

  • Whisk: In a bowl, whisk together your eggs, cottage cheese, salt, and pepper until everything is well combined.
  • Sauté: Heat the oil or butter in a nonstick pan over medium heat. Toss in your spinach and cook it just until it’s wilted, which should take about 1 to 2 minutes.

  • Fold: Carefully fold the omelet in half and let it cook for another 1 to 2 minutes until the eggs are perfectly set.
  • Serve: Sprinkle on the fresh green onions, plate it up, and enjoy while it’s warm!
