Turn your oven to 425°F.
Wash your potatoes well. Cut them into thin strips. Try to keep them the same size so they cook evenly.
Put the fries in a big bowl. Add the olive oil, garlic powder, salt, and pepper. Toss them until they are coated well.
Spread them out on a baking sheet. Do not pile them up. They need space to get crispy
Bake for 25 to 30 minutes. Flip them halfway through. Wait for them to get nice and golden.
Grate your Parmesan while you wait.
Take the fries out. Sprinkle the cheese right away while they are hot. Drizzle the truffle oil over the top.
Serve them while they are steaming. Enjoy!
