Ingredients

For the Creamy Chipotle Dressing:

  • ½ cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • Juice from 1 lime
  • 2 chipotle peppers in adobo sauce, minced
  • 1 tbsp adobo sauce
  • ½ tsp kosher salt
  • 1 clove garlic, finely minced
  • ½ tsp chipotle chili powder

For the Salad Base:

  • 4 cups shredded cooked chicken
  • 1 can black beans, rinsed and drained (15 oz)
  • ½ cup canned sweet corn, drained
  • red bell pepper, finely diced
  • orange bell pepper, finely diced
  • ¼ cup red onion, finely diced
  • ¼ cup romaine lettuce, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • ¼ tsp freshly cracked black pepper

Instructions

  • Make the Dressing: Put your Greek yogurt, mayonnaise, and lime juice into a blender. Add the chipotle peppers, adobo sauce, salt, garlic, and chili powder. Blend it until it is perfectly smooth. It will turn a beautiful light orange color.
  • Mix the Salad: Grab a large mixing bowl. Toss in your shredded chicken, black beans, corn, and diced peppers. Add the red onion, romaine lettuce, and fresh cilantro.
