Ingredients

  • 1 lb carrots, peeled and cut into even sticks
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • ½ cup feta cheese, crumbled
  • 1 tbsp fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Get Ready: Preheat your oven to 400°F (200°C).
  • Mix it Up: In a large bowl, combine the carrots, olive oil, honey, and minced garlic. Toss them well until every piece is coated. Season with a pinch of salt and pepper.
  • Roast: Spread the carrots out in a single layer on a large baking sheet. Make sure they have room to breathe so they get crispy instead of soggy.
  • Bake: Put the pan in the oven and bake for 25 minutes. They are done when they are fork-tender and have pretty brown edges.
  • The Magic Step: Take the pan out of the oven. Immediately sprinkle the crumbled feta cheese and dill over the hot carrots. The cheese will get just a little bit melty.
