Get Ready: Preheat your oven to 400°F (200°C).
Mix it Up: In a large bowl, combine the carrots, olive oil, honey, and minced garlic. Toss them well until every piece is coated. Season with a pinch of salt and pepper.
Roast: Spread the carrots out in a single layer on a large baking sheet. Make sure they have room to breathe so they get crispy instead of soggy.
