Ingredients

For the Salad:

  • 1 cup cherry tomatoes, cut in half
  • 1 cup cucumber, chopped
  • ½ cup red onion, sliced thin
  • ½ cup green bell pepper, chopped
  • ¼ cup black olives, pitted
  • ½ feta cheese, cut into small cubes

For the Dressing:

  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp dried oregano
  • A pinch of salt
  • A pinch of black pepper

Instructions

  • Mix the Veggies: Grab your favorite large mixing bowl. Toss in the halved cherry tomatoes, chopped cucumber, sliced red onion, and green bell pepper.
  • Add the Goodies: Gently drop the pitted black olives and cubed feta cheese into the bowl with your vegetables.
  • Whisk the Dressing: In a separate small bowl, stir together the olive oil, lemon juice, and dried oregano. Add your salt and black pepper. Give it a good whisk until it looks smooth.
  • Pour It Over: Drizzle that lovely fresh dressing right over the top of your salad ingredients.
  • Toss and Serve: Use big spoons to toss everything together. Be gentle so the feta cheese does not break apart too much. Serve it up fresh and enjoy the crunch!

Notes

  • Protein Boost: Top with grilled chicken or chickpeas to make it a full meal.
  • Prep Ahead: Keep dressing separate until serving to stay extra crunchy.
  • Variations: Swap black olives for kalamata olives for a traditional twist.
