Ingredients

For the Mini Croissant Base

  • 12 bakery-fresh mini all-butter croissants
  • 2 tbsp unsalted butter, softened (optional, for spreading)

For Option A: Premium Deli Turkey & Swiss

  • 8 ox roasted turkey breast or honey ham, thinly sliced
  • 6 slices Swiss, provolone, or havarti cheese (halved into 12 small squares)
  • 1 cup fresh butter lettuce or baby spinach
  • 3 tbsp honey mustard or garlic aioli

For Option B: Creamy Tarragon Chicken Salad

  • 2 cooked chicken breast, finely shredded or diced
  • high-quality mayonnaise
  • 1 fresh tarragon, finely chopped (or fresh dill)
  • celery, finely diced
  • ¼ dried cranberries or sliced almonds (for sweet crunch)
  • 1 Dijon mustard
  • 1 lemon juice
  • Fine sea salt & freshly cracked black pepper to taste

Instructions

  • Slice the Croissants: Using a sharp serrated bread knife, slice each mini croissant in half horizontally. Keep the back edge slightly attached if you want an easier grip.
  • Prepare Your Filling Choice: If you are making the Tarragon Chicken Salad, grab a medium bowl and mix your shredded chicken, mayonnaise, chopped tarragon, diced celery, cranberries or almonds, Dijon mustard, lemon juice, salt, and pepper until creamy. If you are going the deli route, just gather your sliced meats, cheese squares, greens, and spreads.
  • Assemble the Sandwiches: For the Deli Meat and Cheese version, spread a thin layer of honey mustard or aioli on the bottom cut side. Layer with butter lettuce, your folded turkey or ham, and a square of cheese. For the Chicken Salad version, spread a light swipe of butter or mayo on the bottom piece to protect the pastry from getting soggy, then scoop a quarter cup of chicken salad on top. Add a leaf of butter lettuce.
  • Arrange and Serve: Place the top halves back onto the croissants. Arrange them tightly in a ring or a neat grid on a pretty wooden board or ceramic platter. Garnish with fresh herbs or grapes, and serve them cold or at room temperature.

Notes

  • Keep Buns Flaky: Try not to assemble these too far ahead of time if you are using wet ingredients. If you want to prep early, spread a thin layer of softened butter on the cut sides of the croissant. It acts like a little moisture shield so the pastry stays crisp.
  • Warm Croissant Variation: If you prefer a warm, melty treat, assemble the turkey and cheese versions, lay them on a baking sheet, brush the tops with melted garlic butter, and bake at 350°F for 8 to 10 minutes until the cheese gets all gooey.
