Ingredients

For the Crispy Baked Wings:

  • 4 lbs chicken wings, wingettes & drumettes
  • 5 tsp baking powder
  • ¾ tsp kosher salt

For the Sauce:

  • 4 tbsp unsalted butter, melted
  • ½ cup Frank’s Original Red Hot Sauce
  • 1 tbsp brown sugar
  • ¼ tsp kosher salt

For the Blue Cheese Dip:

  • ½ cup rumbled blue cheese, softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 clove small garlic, minced
  • 1 – 3 tbsp milk
  • 2 tbsp lemon juice
  • ½ tsp kosher salt
  • Black pepper to taste

To Serve:

  • Celery sticks
  • Carrot sticks

Instructions

For the Crispy Baked Wings:

  • Dry the chicken wings overnight in the fridge, or pat them dry with paper towels.
  • Preheat the oven to 250°F/120°C and line a baking tray with foil. Place a rack on the tray and spray it with oil.
  • In a large bowl, toss the wings with baking powder and salt until evenly coated.
  • Arrange the wings on the rack, skin side up, and bake in the lower quarter of the oven for 30 minutes.
  • Increase the oven temperature to 425°F/220°C and bake for an additional 40-50 minutes until golden brown and crispy.

For the Sauce:

  • In a small saucepan, whisk together the melted butter, Frank’s Original Red Hot Sauce, brown sugar, and salt until combined.
  • Keep the sauce warm or reheat it just before using.

For the Blue Cheese Dip:

  • Mash the blue cheese with sour cream until smooth.
  • Add mayonnaise, minced garlic, milk, lemon juice, salt, and black pepper to the mixture and mix until combined. Adjust the consistency with milk as needed.

To Serve:

  • Transfer the baked wings to a large bowl and toss them with the buffalo sauce until coated.
  • Serve the wings immediately with celery sticks and blue cheese dip on the side.

Notes

Pro Tip: For extra crispy wings, after baking them in the oven, you can broil them for 2-3 minutes on high heat. This will give the wings an extra crunch while keeping them juicy on the inside. Just be sure to keep an eye on them to prevent burning!
