Ingredients

The Base & Veggies

  • 1 lb 90/10 grass-fed ground beef
  • 1 block Provolone cheese, grated
  • 1 yellow onion, diced
  • 1 bell pepper, diced
  • 2 lbs Tater Tots (one full bag)

The Seasonings

  • Salt and black pepper, to taste
  • 1 tbsp Kinders Caramelized Onion Powder
  • 1 tsp Smoked paprika
  • 1 tsp Granulated garlic

Instructions

  • Get the Tots Ready: Preheat your oven using the directions on your tater tot bag. Spread those tots out on a baking sheet. Pop them in the oven so they can get a head start on getting nice and crunchy.
  • Cook the Beef: While the tots are baking, heat up your favorite large skillet on the stove. Add your ground beef, diced onion, and diced pepper. Sprinkle in your salt, pepper, onion powder, smoked paprika, and granulated garlic. Cook it all up until the beef is brown and the veggies are soft. Make sure to drain off any extra grease.
  • Take a Quick Pause: Keep an eye on those tots. When they are about 3/4ths of the way done, pause your timer. Carefully pull the baking sheet out of the oven.
  • Mix It All Together: Grab a big mixing bowl. Gently toss your hot tater tots, your seasoned beef, and your cooked veggies together. Add another tiny pinch of seasoning if you like. Stir gently so you do not break the tots.
  • Fill the Skillet: Pour the whole mixture back onto your baking pan, or into a nice cast-iron skillet. Spread it out so it cooks evenly.
  • Add the Cheese: Pile that grated provolone cheese high right on top. Put it back in the oven for the last few minutes. Bake it until the cheese is melted, bubbly, and beautifully golden.

Notes

  • Cheese Tip: Always grate your own block of provolone. It melts much smoother and gets extra gooey compared to pre-shredded bags.
  • Get Crispy: Don't skip the par-bake step! Getting those tots mostly crispy before adding the meat keeps them from getting soggy.
  • Flavor Boost: If you want a restaurant-style finish, drizzle a little roasted garlic aioli or ranch dressing over the top just before serving.
  • If you want to make this extra special, drizzle some roasted garlic aioli over the top right before you serve it. It adds the most amazing creamy kick!
