Ingredients

BBQ Sauce:

  • 2 chipotle peppers
  • 2 tbsp adobo sauce (from a can)
  • ½ cup ketchup
  • ¼ cup apple cider vinegar
  • 2 garlic cloves
  • 1 tsp Dijon mustard
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • Freshly ground black pepper, to taste

Jackfruit:

  • 1 can unripe jackfruit, drained (20-ounce)
  • 1 tbsp extra-virgin olive oil
  • 1 small yellow onion, thinly sliced
  • ¼ tsp sea salt
  • ½ cup water

Quick Slaw:

  • 2 cups shredded cabbage
  • ¼ cup chopped cilantro
  • ½ tbsp lime juice
  • ½ rsp olive oil
  • Sea salt and black pepper, to taste

For Serving:

  • 8 slider buns or 6 hamburger buns
  • Desired fixings: pickles, mustard, serrano peppers, etc.

Instructions

  • Make the BBQ Sauce: Blend chipotle peppers, adobo sauce, ketchup, vinegar, garlic, mustard, paprika, cumin, and black pepper in a food processor until smooth. Set aside.
  • Prepare the Jackfruit: Shred the jackfruit pieces by hand, discarding any hard core pieces. In a skillet, sauté sliced onion in olive oil until soft. Add shredded jackfruit and cook for 5 minutes. Add water and half of the BBQ sauce, simmer covered for 20 minutes..
  • Make the Quick Slaw: Combine shredded cabbage, cilantro, lime juice, olive oil, salt, and pepper in a bowl.
  • Assemble the Sandwiches: Serve pulled jackfruit on buns with remaining BBQ sauce, quick slaw, and desired fixings.

Notes

Pro Tip: For extra flavor, marinate the jackfruit in a portion of the BBQ sauce for 1-2 hours before cooking. This will infuse the jackfruit with even more smoky goodness.
