Equipment

Ingredients

  • 20 slices thin round Genoa or hard salami
  • 1 block (7 to 8 oz) semi-firm cheese, such as sharp white cheddar, Monterey Jack, or provolone
  • 20 cherry tomatoes
  • 20 pimiento-stuffed green olives
  • 20 knotted bamboo cocktail picks (3.5 to 4 inches)

Instructions

  • Cut the Cheese: Start by cutting your block of semi-firm cheese into neat, uniform cubes. These will act as the sturdy foundation for your skewers.
  • Build the Bottom: Slide a cheese cube onto the bottom of a knotted bamboo cocktail pick, right followed by a whole cherry tomato.
  • Fold the Salami: Take a slice of your thin round salami and fold it back and forth like an accordion to create a cute bow tie shape. Carefully pierce the center of the fold with your cocktail pick right above the tomato.
  • Add the Olive: Finish off the skewer by pushing a pimiento-stuffed green olive onto the very top tip of the bamboo pick.
  • Serve and Enjoy: Repeat the steps for your remaining skewers, arrange them nicely on a platter, and keep them chilled in the fridge until your guests arrive.

Notes

  • Prep Time: Takes just 15 minutes total to cut, fold, and assemble 16 to 20 skewers.
  • Meat Folding: Fold the thin round salami like an accordion so it forms a neat bow tie shape on the pick.
  • Cheese Sizing: Cut your semi-firm cheese block into uniform cubes so each skewer has a sturdy, even base.
  • Serving Tip: Keep your finished platter covered and chilled in the refrigerator until party time.
