Ingredients

  • 2 lb turkey wings (whole or split)
  • ¼ cup canned chipotle peppers in adobo sauce (seeds removed)
  • ¼ cup jarred roasted red peppers
  • ¼ canola or avocado oil
  • 4 cloves garlic
  • ½ cup cilantro (approx. 1/4 bunch)
  • 1 tbsp smoked paprika
  • tsp salt
  • ½ lemon (juiced)
  • 2 green onions (chopped)

Instructions

  • Make the Marinade: Combine chipotle peppers, adobo sauce, roasted red peppers, garlic, smoked paprika, cilantro, salt, and oil in a blender. Blend until smooth.
  • Marinate: Place the turkey wings in a large dish and coat thoroughly with the chipotle mixture. Cover and refrigerate for 4 hours or overnight.
  • Bake: Preheat your oven to 400°F on the convection setting. Place wings on a parchment-lined or non-stick baking tray and bake for 30–35 minutes, or until the internal temperature reaches 160°F. Note: If not using convection, flip the wings every 15 minutes and add approximately 10 minutes to the total cook time.
  • Serve: Remove from the oven, squeeze fresh lemon juice over the top, and garnish with chopped green onions.

Notes

Storage and Freezing

  • Storage: Leftovers can be stored in an airtight container for up to 3 days. Reheat gently in the oven or microwave to avoid drying them out.
  • Freezing: This is an excellent freezer meal. Place wings and marinade in a freezer-safe bag, coat evenly, and freeze for up to 3 months. Thaw in the refrigerator overnight before baking.
