Ingredients

  • 2 cups raw cashews, soaked for 4 hours in boiled water
  • ½ tsp smoked paprika
  • 3 tbsp olive oil
  • ¼ cup nutritional yeast
  • ¼ cup chipotle sauce (from canned chipotles in adobo, blended smooth)
  • 1 tsp liquid smoke
  • ½ tsp salt
  • ½ tsp ground cumin
  • ½ cup water (more if needed for desired consistency)

Instructions

  • Prepare Cashews: After soaking your raw cashews in boiled water for at least 4 hours (or overnight for best results), wash them thoroughly and drain well.
  • Blend Ingredients: Add the drained cashews, smoked paprika, olive oil, nutritional yeast, chipotle sauce, liquid smoke, salt, ground cumin, and ½ cup water into a high-speed blender.
  • Achieve Creaminess: Blend until the mixture is very smooth and creamy, scraping down the sides as needed to ensure everything is incorporated.
  • Taste and Adjust: Taste the queso and adjust the seasoning as needed. You can add more salt, additional spices (like extra cumin or paprika), or more nutritional yeast for a cheesier flavor.
  • Warm & Serve: Transfer the blended queso to a non-stick saucepan. Warm it over medium-low heat, stirring regularly to prevent it from sticking to the bottom. If the queso becomes too thick during warming, add extra water (1 tablespoon at a time) until you reach your desired consistency.
  • Garnish & Enjoy: Serve warm with your favorite garnishes such as fresh cilantro, diced jalapeños, or a drizzle of extra chipotle sauce.
