Ingredients

For the Mini Fruit Tarts

  • 8 pre-baked mini pastry tart shells
  • ½ cup vanilla pastry cream or thick vanilla pudding
  • 1 cup assorted fresh berries (blueberries, raspberries, sliced blackberries, or kiwi)
  • 2 tbsp apricot jam (melted together for tart glaze) (melted together for tart glaze)

For the Chocolate-Dipped Mini Eclairs

  • 8 mini eclair shells or choux pastry puffs
  • ½ cup rich bavarian cream or chocolate pastry cream (for filling)
  • cup dark chocolate ganache or melted semi-sweet chocolate glaze
  • 1 tbsp powdered sugar (for dusting)

For the Delicate Cream Puffs

  • 8 pre-baked mini choux cream puff shells
  • ¾ cup heavy whipping cream* (whipped to stiff peaks)*
  • 2 tbsp powdered sugar* (whipped to stiff peaks)*
  • 1 tsp vanilla* (whipped to stiff peaks)*
  • 1 pinch of edible gold dust or fine cocoa powder (optional garnish)

Instructions

Prepare and Fill the Pastry Shells

  • Mini Fruit Tarts: Pipe or spoon 1 tablespoon of vanilla pastry cream into each pre-baked mini tart shell until ¾ full.
  • Mini Eclairs: Fit a pastry bag with a small round tip and fill with bavarian or chocolate cream. Poke a small hole in the bottom or side of each eclair shell and gently pipe until filled.
  • Cream Puffs: Slice the top third off each cream puff shell. Pipe a generous rosette of vanilla whipped cream into the bottom, then place the pastry cap gently back on top.

Glaze and Garnish

  • Fruit Tarts: Arrange fresh berries neatly on top of the pastry cream. Brush the berries lightly with warm apricot glaze using a pastry brush to give them a high-gloss bakery shine.
  • Eclairs: Dip the top surface of each filled eclair into warm, smooth dark chocolate ganache. Set upright on parchment paper until the chocolate sets firm.
  • Cream Puffs: Lightly dust the tops of the assembled cream puffs with sifted powdered sugar and optional edible gold dust or cocoa powder.

Assemble the Grand Pastry Tray

  • Select a long marble platter or a decorative mirrored tray.
  • Group the sweet bites into alternating diagonal rows or distinct clusters by type, placing the colorful glossy fruit tarts next to the rich chocolate eclairs and fluffy cream puffs to create a striking visual contrast.

Serve Chilled

  • Keep chilled in the refrigerator until 10 minutes before serving, then present alongside coffee, dessert wine, or tea!

Notes

  • Time-Saving Hosting Hack: You can easily use high-quality frozen mini eclair shells, cream puffs, and pre-made tart shells from your local bakery or specialty market. Assembling, glazing, and decorating them yourself gives them a bespoke, artisanal touch while saving hours of baking time!
  • Make Ahead: Assemble up to 6 hours before your event and store covered in the refrigerator. Apply the shiny apricot glaze onto the fruit tarts right before serving to keep the pastry shell crisp.
