Ingredients

  • 1 large sweet potato, cubed

  • ½ cup black beans, drained and rinsed

Instructions

  • Roast the Potatoes: Heat your oven to 400°F. Toss the cubed sweet potatoes with olive oil, salt, pepper, and a pinch of taco seasoning. Spread them on a baking sheet. Roast for 20 to 25 minutes until they are soft and golden.
  • Cook the Turkey: While the potatoes are in the oven, brown the ground turkey in a skillet over medium heat. Add the rest of the taco seasoning. Stir it well until the meat is fully cooked.
  • Warm the Beans: Pop your black beans in a small pot or microwave just to warm them up a little bit.
  • Build Your Bowl: Start with a big scoop of the sweet potatoes. Add the seasoned turkey and the warm black beans right next to them.
