Ingredients

  • 6 cups fresh watermelon, cubed
  • 1 cup feta cheese, cubed or crumbled
  • 1 cup fresh blueberries
  • 2 tbsp fresh mint, chopped
  • Juice of 1 large lime
  • A small pinch of coarse sea salt

Instructions

  • Layer the Base: In a large, pretty serving bowl, gently combine your cubed watermelon, feta cheese, and fresh blueberries
  • Add the Freshness: Scatter the chopped fresh mint evenly over the top of the fruit and cheese mixture.
  • Dress It Up: Squeeze the juice of one fresh lime directly over the salad to wake up all those beautiful flavors.
  • The Final Touch: Sprinkle a tiny pinch of coarse sea salt over everything to really make that sweet watermelon flavor pop.
  • Toss and Serve: Give it a very gentle toss so you do not break up the feta too much, and serve it up immediately.

Notes

  • Chill First: Always chill your watermelon for a few hours before assembling to keep it crisp.
  • Toss Gently: Fold the ingredients carefully so the feta doesn't break apart.
  • Serve Fresh: This salad is best served immediately while it is perfectly chilled.
