I like to add a little bit of this dressing to elevate the fruit to a more dessert-like dish, for cookouts and events. Rarely do I bring home a dish with any fruit. The bowl usually comes home empty!

How to Make Watermelon Cantaloupe Mint Salad with Honey Vinaigrette

Ingredients

  • 2 cups watermelon balls or chunks 
  • 2 cups cantaloupe balls or chunks 
  • ¼ cup lemon juice
  • ¼ cup honey
  • ⅓ cup fresh chopped mint leaves

Instructions

  • Using a melon ball spoon, make watermelon and cantaloupe balls 
  • Add them to a large serving bowl
  • In a small bowl whisk lemon juice and honey together.
  • Pour the vinaigrette over the fruit and toss.
  • Add chopped mint.
  • Stir gently and refrigerate.
  • Serve chilled or at room temperature.
  • It makes about 5 cups.

Hot Tips:

  • Save any scraps to make juices and/or smoothies
  • Garnish with mint and enjoy! You can make this salad a couple of hours before serving, refrigerate and allow the flavors to soak in.
