How to Make Watermelon Cantaloupe Mint Salad with Honey Vinaigrette

Ingredients
- 2 cups watermelon balls or chunks
- 2 cups cantaloupe balls or chunks
- ¼ cup lemon juice
- ¼ cup honey
- ⅓ cup fresh chopped mint leaves
Instructions
- Using a melon ball spoon, make watermelon and cantaloupe balls
- Add them to a large serving bowl
- In a small bowl whisk lemon juice and honey together.
- Pour the vinaigrette over the fruit and toss.
- Add chopped mint.
- Stir gently and refrigerate.
- Serve chilled or at room temperature.
- It makes about 5 cups.
Hot Tips:
- Save any scraps to make juices and/or smoothies
- Garnish with mint and enjoy! You can make this salad a couple of hours before serving, refrigerate and allow the flavors to soak in.
